Kathleen's Chicken and Rice

My friend Kathleen recently made this recipe for a potluck and I will warn you it looks a little scary but holy crap it's GOOD!

Ingredients:
6-7 chicken breasts
1 bottle of italian dressing
8 oz. cream cheese
1 can cream of chicken soup
Cooked Rice

Directions:
Throw chicken and italian dressing in crockpot and cook for 8 hours. Shred chicken and put back in the crockpot and add the cream cheese and cream of chicken. Stir and cook for an additional half hour. Serve over rice.

Aunt Elaine's Fudge

It is Christmas tradition in our family to enjoy this fudge each year. Thanks Aunt Elaine for introducing it to mom.

Ingredients:
4.5 cups sugar
1 can canned milk
12oz. bag of choco chips
2 cubes of butter
1 8oz. symphony bar (milk chocolate)
3 tsp. vanilla
1 7oz. jar marshmellow cream

Method:
In a large pan add sugar and canned milk, stir and bring to a boil (rolling). Boil for 8 minutes stirring constantly. Remove from heat. Add choco chips, symphony bar, marshmellow cream, butter and vanilla. Use a hand mixer to whip. For darker fudge add more choco chips.

As an alternative, pour half of fudge batter into greased dish and add a layer of sliced snickers bars. Then pour the other half of fudge on top.

Frosting

This is a recipe for home made frosting. Works great on cakes, cupcakes and Paije's sugar cookie recipe. Enjoy!

32 oz. pckg. Powdered Sugar
3/4 cup of shortening (not butter flavored)
1/2 cup butter/margerine
1/2 cup of milk
2 tsp. vanilla
1/2 tsp. salt


Method:
Throw all the wet stuff in first and add powdered sugar slowly.

Beef Stroganoff in a Skillet

Okay I just discovered this recipe today and made it for dinner. Everyone loved it, including Landon (who is super picky). It is one of Emeril's recipe and it is super quick and easy.

In the past every time I thought of Beef stroganoff I thought of Hamburger Helper and I wanted to hurl. I am glad Emeril changed my mind on Beef Stroganoff.

1 lb lean ground beef
1/2 tsp. salt
1/4 tsp. ground pepper
1/2 tsp. Essence (recipe to follow)
1 Tbsp. Olive Oil
1/2 cup chopped onion
1 cup sliced white button mushroms (I left out the fungus and it was still good)
Wide egg noodles, cooked
1/2 cup beef broth
1/4 plus cup of sour cream

Emeril's Essence Creole Seasoning

2.5 Tbs. paprika
2 Tbs. salt
2 Tbs. garlic powder
1 Tbs. black pepper
1 Tbs. onion powder
1 Tbs. cayenne pepper (Grandpa Palmer would like this!)
1 Tbs. dried oregano
1 Tbs. dried thyme

Combine all ingredients thoroughly.

Directions:
Season beef with salt, pepper and Essence

In a large skillet, heat the oil over medium heat. Add the seasoned beef and cook stirring until browned. Drain excess oil. Add the onions and cook stirring until soft. Add mushrooms and garlic and cook, stirring until the mushrooms have released their juices, about 2 minutes. Add the egg noodles, beef broth and sour cream. Cook, stirring until the mixture thickens slightly, 5-6 minutes.

Caramelitos

My sister-in-law Megan showed us this recipe and I can't make them too much because somehow I seem to eat most of them.

2 1/4 cups oats
2 cups flour
1 1/2 cups butter
1 1/2 brown sugar
1 tsp. baking soda
1 tsp salt
1 1/2 cups Mrs Richards caramel topping
6 TBS flour
12 oz Chocolate chips

Melt butter and brown sugar, add oats, flour, soda, and salt. Press two thirds on the mixture in a 9 1/2 x 11 pan. Bake at 350 for 10 minutes
Sprinkle chocolate chips over crust, combine 6 TBS flour with caramel topping and pour over chocolate chips. Crumble remaining mixture over the top. Bake for 15-20 mins. cool completely

Homemade Waffles

Well I have been lazy lately and rediscovered this recipe from my mission and they are to die for good but I can't take credit I owe it all to Sister Day.

2 cups flour
2 cups milk
2 eggs
4 tsps baking powder
1 tsp salt
1/3 cup oil

wisk together and bake in waffle iron until golden brown

Frosted Banana Bars

Ingredients:
1/2 cup butter
1 1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 Cups flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe banana's

Directions:
In a mixing bowl cream butter and sugar, add eggs, sour cream and vanilla.
In a separate bowl combine flour, baking soda,and salt.

Gradually add flour mixture into mixing bowl while mixing, then add the bananas while mixing.

Take the mixture and spread it into a greased cookie sheet and bake at 350 degrees for 20-25 minutes.

Frosting recipe:
Ingredients:
1 package 8 oz cream cheese
1/2 cup butter softened
2 tsp vanilla
3 3/4 Cups of powdered sugar.

Directions:
mix cream cheese, butter, and vanilla together.
Slowly add powdered sugar to this while mixing.

Miniature Key Lime Pies


I found this recipe on one of my favorite recipe blogs and decided it was worth a try. I made it for our Easter dinner and decided it was Palmerlicious worthy.

Ingredients:
9 mini graham cracker pie crusts
5 egg yolks
1 (14oz.) can of sweetened and condensed milk
1/2 cup of key lime juice or regular lime juice
2 drops of green food coloring
Cool whip or home made whip cream (see below)

Combine ingredients and whisk together. Scoop into mini graham cracker crust pies and bake at 350 for 10-11 min. Let cool and keep in the fridge until your ready to serve. Add whip cream on the top.

Whip Cream
1 cup whipping cream
1/3 cup powdered sugar

combine and use and electic hand mixer blend until you have soft peaks.

Paije's Pink Sugar Cookies

Cookie
1 cup of butter (softened)
2 cups sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
1/2 tsp. baking soda
4 tsp. baking powder
4.5 cups flour
1/2 tsp salt

Cream butter and sugar. Add eggs and beat. Add sour cream and vanilla. Sift dry ingredients and add to butter mixture. Roll on floured surface 1/3 to 1/2 inch thick. Use a a round cookie cutter and place on a greased cookie sheet and bake at 350 for 14-17 minutes.

Frosting
32oz. package powdered sugar
3/4 cup shortening (not butter flavor)
1/2 cup butter/margerine
1/2 cup milk
2 tsp. vanilla
1/2 tsp salt

Throw all the wet stuff in first and slowly add powdered sugar.

Spritz Cookies

1.5 cups butter (softened)
1 cup sugar
1 egg
1 tsp. vanilla
3.5 cups flour
colored sprinkles

Cream butter and sugar. Add eggs and vanilla. Beat well. Add flour, one cup at a time. Dough will be soft, don't refrigerate. Bake at 375 for 8-10 minutes. This is the pampered chef recipe.

Ghiradelli Chocolate Chip Cookies

2 1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup butter (softened)
3/4 cup sugar
3/4 cup brown sugar
2 eggs
2 tsp. vanilla
1 (12oz) bag chocolate chips

Cream butter and sugars. Add eggs and vanilla. Sift and add flour mixture. Bake at 375 9-11 minutes.

Mom's Cabin Cookies

1 cup butter (softened)
1 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2.5 cups flour
1.5 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cups Hershey's Mini Kisses (milk chocolate)

Preheat oven to 375. In large bowl beat butter, peanut butter, and sugars. Add eggs. Sift flour, soda, powder and salt. Add to butter mixture. Last add the mini kisses. Roll in sugar and press with two fingers. Bake 8-10 minutes.

30 Day Bran Muffins

This recipe is from John's Mom. She makes these every Christmas to pass out to friends. I am addicted, I love these muffins.

2 cups boiling water
5 tsp. baking soda
1 qt. buttermilk (4 cups)
2 cups sugar
1 cup shortening
4 eggs
6 cups flour
1 tsp. salt
4 cups all bran cereal
2 cups bran flakes cereal

Boil water in large pot. Add baking soda and buttermilk and stir. In your largest mixing bowl (my kitchen aid works, just barely) combine shortening, sugar and salt. Beat in eggs one at a time. Alternate flour and liquid. Then add cereal and mix slowly until combined. Scoop into containers with lids and you can either freeze or keep in the fridge for up to 30 days. Bake at 425 for 15 min.

Fried Rice

4 cups of cooked rice (room temperature)
2 eggs (beaten)
1 cup frozen peas (thawed)
2 Tbs. grated carrot
1/2 cup diced onion
1.5 Tbs. butter
2 Tbs. soy sauce
salt/pepper (dash)
1 cup diced spam

Scramble eggs in a small pan and separate into pea sized bites. Combine rice, peas, carrots, egg, onion and spam in a large bowl and toss together. Melt butter in large saucepan over med/high heat. When butter has melted dump bowl of ingredients in and add soy sauce and salt/pepper. Cook 6-8 minutes stirring often. I like to serve this with teriyaki chicken or egg rolls.

Parmesan Bread Sticks

1 loaf of Rhodes frozen bread dough
1/4 cup butter
1/2 cup parmesan cheese

Thaw bread dough for about 2 hours. Cut loaf into 8 pieces and stretch each piece to about 6". Melt butter in a shallow dish and dip each bread stick top into the butter and then roll it in the parmesan cheese. Place on a greased baking sheet and let rise for 30 minutes. Bake at 400 for about 12 minutes.

Minestrone Soup

1 lb. pork sausage
4 cups water
2 stalks of celery (diced)
2 large carrots (diced)
1 medium onion (diced)
1 (10oz)can beef broth
1 (10oz)can bean with bacon soup
1 (28oz)can diced tomatoes
1 Tbs. sugar
2 garlic cloves (minced)

Brown sausage in a large pot. Add remaining ingredients and stir together. Simmer uncovered over low heat for at least an hour. This soup is best if made a day in advance. It also freezes really well. I like to serve this with pasta dishes and parmesan breadsticks.

Pasta Salad

This recipe came from John's dad.

12oz. pasta (bow tie, shell, and wacky spiral)
2 cans sliced black olives
1 can garbonzo beans
1 can kidney beans
1 package of dry sliced salami
1 cup cheddar cheese
1 cup mozzarella cheese
16oz bottle of light Italian dressing

Cook pasta according to directions, transfer to a colander and rinse with cold water. Let pasta stand in colander while you add the other ingredients. Pour liquid and then ingredients of each can over the standing pasta (olives and beans). Then transfer to a large bowl with a lid. Cut salami into very small pieces and cube the cheese. Add and mix with the pasta. Right before serving add 16oz. of light italian dressing.

Chico Warm Ups

A Chico clubhouse favorite. We ate this to keep warm while watching our brothers play football.

Favorite Chili (home made or store bought)
Fritos
Shredded Cheese

Cook chili. First add fritos to the bottom of your chili bowl, then add chili and top with lots of cheese (Hmmm...sour cream would be good too!)

French Bread Pizza

This is what I call super lazy pizza, but it tastes really good.

1 french bread loaf (cut in half)
pasta sauce
shredded mozzerella cheese
favorite pizza toppings

Butter french bread loaf and spread pasta sauce on it. Sprinkle with cheese and your favorite pizza toppings. Broil at 400 for 5-6 minutes and then cut into pieces.

Chicken Enchaladas

1 lb. of cooked cubed chicken
1/2 cup sour cream
2 cans cream of chicken soup
2 cups of cheese
salt/pepper to taste
tortillas

Cook and cube chicken. Combine all of the other ingredients minus the tortillas in a medium pot and cook over medium heat until smooth (continually stirring). Spray a 9X13 pan with nonstick spray. Add some chicken and sauce in the tortilla, roll up and place in the pan. Repeat until pan is full and then pour the remaining sauce over top, making sure all the tortillas are covered. Sprinkle with lots of cheese. Bake at 350 until warm and bubbling.

Potato Cassarole (The Best Version)

Ha Ha Ha...feel free to post your own "Best" versions of this recipe. Everyone seems to make this a little differently, I just happen to think mine is the best!

6 Russet Potatoes
1/2 cup sour cream
2 cans cream of chicken soup
2 cups of shredded cheddar cheese
salt/pepper to taste


Peel and cube potatoes. Boil until fork tender (about 10 minutes). While potatoes are cooking combine soup, sour cream, shredded cheese and salt/pepper to a medium sized pot and heat (continually stirring) until mixture is smooth and has melted together. Line the bottom of 9X13 with the cooked potatoes and then pour melted soup mixture over the top. Sprinkle with a generous amount of cheese and crunched up chips of your choice (I like ruffles). Bake at 350 until heated through and bubbling.

Teriyaki Chicken

Chicken Breasts and Thighs
Yoshida's Teriyaki Sauce
French Bread Rolls

Super easy! Marinate chicken all day in the teriyaki sauce and BBQ until done. We usually eat these on Safeway's soft french bread rolls.

Brunson Beans

2 medium sized cans of Pork-n-Beans
1/4 cup brown sugar
Sweet Baby Rays BBQ sauce (to taste)


Drain as much liquid as you can from the pork and beans and add to a medium pot. Add brown sugar and sweet baby rays (I usually use 1/2 a large bottle or 1 small bottle) and mix. Simmer on low for 20-25 minutes

French Dip Sandwiches

I got this recipe from my sister-in-laws recipe blog and it is now one of my favorites!

Hoagie Rolls
1 lb. Italian Roast Beef
Meunster Cheese (8 slices will do)
Butter
Au juis packet

Follow directions on the back of Au Juis packet. Butter hoagie rolls and put under the broiler until they brown and crisp. Pull out and add the roast beef and meunster cheese and return to broiler until cheese is melted and bubbling a bit. Remove and serve with au juis gravy for dipping. Oooh soooo goood!

Home Made Pasta Sauce

Okay so technically it's not completely home made, but it sure tastes like it.

2 Tbs. olive oil
1/4 cup chopped onion
2 cloves garlic (minced)
1 (28oz) jar of your favorite pasta sauce
1 tsp. sugar
1 roma tomato (finely chopped)
1/4 tsp. oregano
1/4 tsp. thyme


In a medium saucepan heat olive oil over medium/high heat. Add onion and saute until tender. Add garlic to onions and saute for only 45 seconds or the garlic will become bitter. Add a jar of pasta sauce, sugar, tomato, oregano, thyme and mix together. Simmer over low heat for 15 minute to blend the flavors. Use this sauce in any of your favorite pasta dishes. I've used it on tortellini, lasagna, parmesian chicken, meatballs, pasta and lots others. This sauce freezes awesome!!! I always make a double batch and freeze the excess.

Karen's Coffee Cake

Well we don't drink coffee but we love Karen's coffee cake!

Batter
1.5 sticks butter
1.5 cups sugar
3 eggs
2 tsp. vanilla
3 cups flour
1.5 tsp. soda
1.5 tsp. baking powder
1/4 tsp. salt
1 pt. sour cream

Topping
3/4 cup brown sugar
2 tsp. cinnamon

Cream butter and sugar. Add eggs and vanilla. Sift dry ingredients and add the the wet ingredients and mix. Add sour cream. Pour 1/3 of batter into a greased angel food cake pan. Spread 1/3 of topping. Repeat two times ending with the topping. Bake 1 hour at 350. Also can be cooked in 9x13 pan for 40-45 minutes.

Icing
1 cup plus 1 Tbs. powdered sugar
2 Tbs. milk

cook slightly and drizzle over the top of cake.

Banana Bread

3 ripe bananas
1 cup sugar
1/2 cup butter (softened)
2 eggs (well beaten)
1 tsp. baking soda
1/2 tsp. salt
1/2 cup walnuts (optional)
2 cups flour
brown sugar

Mash bananas and set aside. In a large bowl cream sugar and butter. Stir in eggs and mashed banana. In a separate bowl sift dry ingredients and add to the wet ingredients and mix. Spoon into two greased 9x5 loaf pans and sprinkle the tops generously with brown sugar. Bake at 350 for 25 minutes. Reduce heat to 275 and bake an additional 20-25 minutes or until a toothpick comes out clean.

Miranda's Fancy Cupcake Frosting

1 stick butter
8oz cream cheese
1/2 stick of crisco
2 tsp. vanilla
32oz powdered sugar (may need more)
1/4 cup whipping cream


Cream butter, crisco and cream cheese. Add vanilla and whip. Add powdered sugar slowly. Add whipping cream and mix until a good consistency.

Royal Icing

2 large egg whites or more to thin icing
4 cups of sifted powdered sugar or more to thicken icing
Juice of one lemon
3 drops of glycerin

Beat egg whites until stiff (not dry). Add sugar, glycerin and lemon juice. Beat for 1 minute more. If it's too thin add more sugar, if it's too thick add more egg whites.

Pj's Oatmeal Scotchies

1.5 cups flour
1 tsp. baking soda
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1 cup butter (softened)
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 tsp. vanilla
3 cups oats
1 cup butterscotch chips
2/3 cup chocolate chips

Cream butter and sugars together. Add eggs and vanilla and mix. Sift all the dry ingredients (minus oats) and gradually add to the wet ingredients. Add oats and mix. Add chocolate chips and Bake at 375 for 8-10 minutes.

Home Made Oreos

1 Devils Food Cake Mix
1/2 cup oil
1/4 cup flour
2 Eggs
1 can of vanilla frosting

Mix all together. Roll into small balls (no comments you guys!) and flatten just a little on the cookie sheet. Bake at 375 for 6-8 minutes. Cool, match up two cookies and frost.
